【鱼香肉丝】
食材准备
主料:猪里脊肉、青椒、胡萝卜、木耳、土豆。
佐料:葱、姜、蒜、生抽酱油、鸡蛋、醋、老抽、淀粉、鸡精,白糖。
开始制做
1、里脊肉切成肉丝,青椒、胡萝卜、木耳、土豆全部切丝,葱、姜、蒜切末备用。
2、将切好的肉丝放入碗中,打入一个鸡蛋清,放入适量淀粉,少许油抓匀,养10分钟。
3、空碗倒入生抽,少许老抽,醋,鸡精,白糖,水淀粉调成汁备用。
4、热锅倒油,油温五成热放入养好的肉丝,滑油半分钟后,把青椒丝土豆丝胡萝卜丝木耳丝一起下锅,微微过油至变色,捞出控油备用。
5、另起锅烧油,油烧热放入葱姜末红油辣豆酱放入蒜末爆出香味。
6、倒入肉丝,倒入调好的料汁,继续翻炒1分钟即可出锅。
7、香气浓郁,酸甜可口的鱼香肉丝完成!

一、选材
里脊肉是首选,吃起来较为鲜嫩。
二、火候
炒鱼香肉丝要猛火快炒,火要够大,锅气要足,这样炒出的菜味自然不赖。
三、比例

主料:里脊肉400g、胡萝卜1根、黑木耳少许
辅料:葱、姜、蒜、鸡蛋、淀粉、盐、豆瓣酱、糖、醋、生抽、料酒

1、猪里脊肉切丝,倒入适量清水,洗去猪肉里的血水,捞出来挤干水分备用。

2、将肉丝抓散开始腌制,放少量盐、生抽、料酒,再打入一个鸡蛋,抓匀后放入适量淀粉,上浆腌制10分钟左右。

3、胡萝卜切成丝,泡发的黑木耳切成丝,青椒去头去籽切成丝备用。

4、这一步调配鱼香汁:姜葱蒜切末,加2g盐,3g十三香,2勺白糖,2勺生抽,2勺香醋,1勺料酒,放适量干淀粉,再加点清水搅拌均匀备用。

5、锅中烧水,水开之后先放入木耳焯水30秒,再放入胡萝卜煮30秒,最后放入青椒丝,断生后倒出控水。

6、锅中倒入适量的油,油热之后放入肉丝,炒至肉丝变白后放入葱姜蒜,炒香之后放入一勺郫县豆瓣酱。

炒出红油后放入木耳,胡萝卜丝,青椒丝,翻炒均匀后倒入调好的料汁,快速翻炒均匀,最后放入葱段,待收汁后就可以出锅装盘了。

【小技巧】
(1)腌制肉丝的时候,可以加少量植物油防止粘锅;
(2)鱼香肉丝里还可以加入冬笋一并炒制;
(3)料汁随着主料的量而变化,切不可一成不变。

鱼香肉丝里面为什么没有鱼?它和鱼有什么关系?不管了,好吃就行!今天小易来跟大家分享鱼香肉丝的家常做法,做出来咸、香、鲜、辣,颜值口味都在线,特别下饭,味道不比饭店里的差。来看看吧!
所需食材:
瘦肉、黑木耳、冬笋、生姜、泡灯笼椒、大蒜、盐、胡椒粉、鸡精、生抽酱油、料酒、豆瓣酱、鸡精、蚝油、陈醋、白糖、芝麻香油、干淀粉
*** 步骤:
之一步:一块瘦肉洗净后,放入冰箱冷冻一会儿(这样更好切一点),然后切成肉片,再改刀切成丝,放入大碗中备用;青葱切成葱花备用。
第二步:往肉丝中加入少许食盐入底味,再加入少许胡椒粉、鸡精、生抽酱油、料酒调味,抓匀后往肉丝中加入少许清水,搅拌至肉丝把水分完全吸收,再打入半个鸡蛋清,搅拌均匀后加入少许淀粉,最后淋入少许香油,抓拌均匀。
第三步:黑木耳泡发并清洗干净,改刀切成丝;冬笋切片再改刀切成丝;大蒜、生姜切成末(大蒜比生姜多一些);泡灯笼椒去掉籽然后剁碎再加入少许豆瓣酱充分剁碎,剁细腻。
第四步:调汁。准备一个大碗,加入少许盐入底味。再加入鸡精(不喜欢的可以不放)、生抽酱油、陈醋、白糖、料酒、芝麻香油、蚝油(也可以不加)调味,然后继续往碗中加入少许清水和干淀粉,用筷子搅拌均匀备用。
第五步:锅中加入清水烧开,然后下入木耳和笋丝,焯水40秒左右,用漏勺捞出来控干水分备用。
第六步:把锅先充分烧热,然后加入一勺油,晃动锅子,让锅的四壁都淋上油,油热之后倒出去,再加入一点冷油,重复这一步骤2-3次。再次往锅中加入冷油,然后把腌制好的肉丝下入锅中,用勺子快速滑散,炒至肉丝变白,然后倒出来备用。
第七步:把锅烧热加入少许的油,下入姜蒜末,煸炒出香味后下入泡椒末和豆瓣酱,炒香后下入肉丝、笋丝和木耳,继续煸炒出香味后,倒入调好的料汁,大火翻炒均匀后,撒入葱花,再淋入少许明油,翻炒均匀即可出锅。
