鸡蛋3个
温水50克
白糖5克
酵母5克
面粉适量

首先碗里打入鸡蛋,增加营养,再加入温水,加水能使烙出来的饼更加地柔软好吃,先将水与鸡蛋搅拌融合
再加入5克的白糖,5克的酵母粉,继续搅拌,搅拌至白糖和酵母完全溶解
再少量多次加入普通面粉,每次加入都要搅拌均匀。
注意:面粉别加多了哟,面粉加多了烙出来的饼会发硬,口感也不好。
最后搅拌成像这样非常细腻,用筷子挑起来低落的状态,就可以了
盖上盖子发酵一个晚上,如果是夏天可以放入冰箱冷藏发酵,我这个就是发酵一个晚上的面糊,里面都是满满的小气泡,说明已经发酵好了,用筷子搅拌均匀,排一下空气
平底锅开中火不用刷油,盛两勺面糊倒进锅里面,用勺子轻微地转圈,滑动面糊,圆饼的形状就出来了。
大概烙一分钟左右,看到面糊的表面膨胀有气孔,半凝固的状态,把它翻一个面再烙一分钟左右用铲子按压,感觉饼坯回弹,就好了

上次给大家发了一个扯面的视频,评论区里有好多人提出疑问,有的人说是要用那么好的面粉,有的人说我加了面粉改粮剂类,还有的人不知道是用热水、凉水,也可能是我给大家讲清楚。
其实要想拉这个扯面,其实不必要用怎么好的面粉,只要你不是低筋面粉,就是平时家里面买的那种面粉都能成,关键在这个和面。今天我就给大家分享怎么和着出来的面、具体水的比例,还有就是揉的过程,我给大家详细细细的讲个,保证你看了之后,每个人都能扯出来那么好的扯面。
做是这扯面要用凉水和面,水是越凉越好,凉水和着出来的面,时间放的再长,面才越来越软,拉出来容易拉开。今天就给大家分享一斤面粉的量,一般家庭两三个人,一斤面粉就差不多就一斤面粉放多少盐,大家以后和的时候按这个比例着放,一斤面可粉也就是50克。
加上大概就是5克左右的盐,盐加多了的话面就扯出筋太大,拉不开面。加盐加少了的话,这个面它下着锅里面不筋道,而且拉的时候容易断。水是500克的面粉加水就加250克的水。现在开始和面,加水不要一次把水加进去,是边加水边搅拌,不要一次加进去。
水加完就将面就这样往面絮打,先不要往一丝揉,先打成这种面絮。打成这样的面絮之后,然后再把面往一起揉。之一道揉面揉的不是很光,你再揉都揉不光。然后把这面放在案板上,盖上盆子醒面10分钟再揉。10分钟以后,就把这个面再给揉一道。揉面尽量于手掌这样按压,揉面的时候就不能再面揉成一团了就揉成这种长条,把它中间对折着,再用手掌这样再揉,对折一起,再醒10分钟再揉,这样反复醒,反复揉两三次后面就好了。
·把面再揉成这个面团,把面擀开,当面擀成这样的面饼之后薄厚均匀的面饼。在面饼上面抹上一点油,两面都抹上点,少抹一点油。两面抹后以后用保鲜膜盖住,不要凉干。保鲜膜盖住以后,醒面40分钟到30小时,低于这个时间面是扯不开的。
·面醒好之后,撕掉保鲜膜,这个时候就切面,切成这种长条,切一根往前拨,切一根面往前一拨,切成条以后撒点干面粉,这样活动一下,尽量的变圆一点,这个就变得很圆了。这么加搓一下,压着一打。面扯上,然后回过来,一拉一回缩,一拉一回缩这样这个面才能熟了。
·面就扯好了,想吃宽面的时候可以切宽一点,两个指头两边按压上,把这边上紧贴着边按压。是不是跟鱼骨一样?按压下的这个是不是跟鱼骨一样,中间的一道梁,边上非常薄,再这样扯长,然后再扯,喜欢吃宽面的人扯成这种宽面。
