酸菜鱼属四川菜系,以其特有的调味和独特的烹调技法而著称。以鲜草鱼为主料,配以四川泡菜煮制而成。此菜虽为四川民间家常菜,但流传甚广。成菜肉质细嫩,汤酸香鲜美,微辣不腻;鱼片嫩黄爽滑。酸菜鱼流行于90年代初,在各地餐馆都有其一席之地,重庆的厨师们又把它推向祖国的大江南北,酸菜鱼是重庆菜的招牌菜肴。

【酸菜鱼】

1.首先,我们处理一下鱼,草鱼一条,刮鳞开肚。用刀先片下鱼肉,把鱼骨斩成段。片去鱼刺,如果不会摆弄的,可以让市场的卖鱼的给你处理好。然后再把鱼身片成鱼片。

2.把鱼片和鱼头鱼尾鱼骨分开放置。先把鱼片用水多冲洗几次,同时使鱼片吸收水分,然后挤一下表面的水分。

3.现在,我们把鱼片用调料腌一下,加入食盐1克、胡椒粉1克、料酒5克、用手抓匀,打入一个鸡蛋清,蛋清遇热迅速凝固,能够锁住鱼片的水分,口感比较鲜嫩,最后再加上一点淀粉,抓匀后,腌制15分钟。

4.酸菜用水冲洗后,酸菜叶子切成段。根部比较厚,要片成薄片。

5.大葱白一根,切成四厘米的段,生姜一块 切成薄片,加入一粒八角,一把红干椒,一把青花椒。小米泡椒一把,连同泡椒水倒入盆中备用。

6.大蒜一把,拍扁后切成碎粒。大葱白切成两半,然后切成葱花。再取出一些小米椒切碎,和蒜末放在一起备用。

7.锅里加入清水。我们先把鱼头鱼骨酸菜倒入锅内。加入一大勺料酒,开大火把水煮开。水开后煮1分钟倒出控水,然后用凉水冲洗。

8.下面,我们开始烹饪,锅里烧油,倒入葱姜花椒,红干椒。翻炒出香味以后,倒入焯过水的鱼骨和酸菜。再加入开水,再加一勺料酒,把小米椒和泡椒水一块倒入锅内。

9.加入白醋20克、食盐3克、胡椒粉2克、白糖2克、开大火把水烧开,水开后煮10分钟,然后捞出倒入盆中。把鱼头鱼尾摆好。

10.下面继续把水烧开,锅里加入鸡粉2克。然后把鱼片散开抓入锅内,用勺子轻推锅边,使水面顺势转圈,免得鱼片粘连,煮20秒钟就可以捞出。把鱼片倒入盆中,把汤汁也倒入盆中。

11.我们再激一些热油,盆中撒上蒜末,葱花和小米椒碎再加上一把红干椒。

12.锅里烧油,把油烧至冒青烟,然后把热油浇在上面,把蒜香激发出来,最后再撒上香菜。

原料:

草鱼一条、葱片、姜丝、蒜末、小米辣、小米辣里面的水、酸菜

1、下面先把原料改刀,小米辣切成小段, 酸菜把根部是比较厚的地方切成片,酸菜叶铺开,切成大片备用。

2、下面把鱼改刀,把鱼从脊骨的地方从中间片开, 然后从头部把鱼肉切掉,另一面也用同样的 *** 吧鱼肉片下来,把鱼头从中间剁开,然后把鱼肉上面的大刺用刀片掉,再把鱼肉片成长10厘米长的鱼片 ,片鱼片的时候要薄厚均匀。

3、然后把片好的鱼片放进清水内浸泡10分钟,浸泡能去除鱼肉内的血水,这样做出的鱼片更洁白,而且不腥,利用浸泡鱼片的时间把剔除的鱼骨剁成块备用。

4、10分钟后,把泡好的鱼片捞出,挤去多余的水分,然后用干毛巾沾干表面的水分,沾干水分是给上浆打基础。

5、下面开始给鱼麻味,加入盐5克,腌制鱼肉用盐要多一点,成菜鱼肉要透出盐味才好吃, 再加入适量的料酒去除鱼的腥味 ,然后用手抓匀,抓粘腌制5分钟。

6、接下来把红薯粉芡加入适量的清水稀释依稀一下,用手抓匀,粉芡没有疙瘩为止。另取一碗,打入一个蛋清,加入适量的生粉,搅拌均匀备用。

7、下面开始给鱼肉上浆,把稀释好的红薯粉芡和蛋清糊倒进鱼片内,用手搅拌均匀,然后顺一个方向搅打上劲备用。

8、下面开始上火 *** : 锅上火烧热,加入适量的清油,滑一下锅,准备煎制鱼骨,这样煎制鱼骨的时候不粘锅,锅内留少许底油,下入鱼头鱼骨煎制,煎的时候要不断的转动过,让受热均匀,再煎制的时候可以适量的加入少许的猪油,,加猪油煎制炖出来的汤更浓白,煎制一面金黄然后翻过来煎制另一面。

9、两面都煎制金黄然后加入适量的清水,水要一次性加足,中途不要再加水,大火炖制鱼汤,把鱼汤炖制浓白倒出备用,这个 *** 虽然麻烦,适合家庭 *** ,这个做出来更营养。

10、下面开始炒酸菜,锅上火加入适量的清油,加入小米辣、葱姜,上火爆炒出香味,然后下入酸菜爆炒,把酸菜炒香,然后把炖好的鱼汤倒进去,开始调味,加入两勺胡椒粉,这个胡椒粉是自己磨的,把小米辣水加进去,小米辣水是增加辣味的,再在加盐调味,这道菜酸辣,盐要多一点才能突出鲜香味道,出锅前加入一勺味精调味即可倒出。

11、锅洗净上火,加入适量的清水,水开后离火,把鱼片一片一片下进去,鱼片下完之后,上火加入,锅内水微开,把鱼片倒出控水,水在笊篱内要控干净,然后盛入盛器内。(也可直接把鱼肉下入鱼汤汆熟,这样更入味,用清水汆鱼片更美观)

12、锅内再次加入适量的色拉油,把油烧热,下入花椒炒香,然后下入干辣椒、蒜茸爆香,快速出锅倒在酸菜鱼上面即可。

*** 关键:

1、 *** 酸菜鱼还可以选用黑鱼,鱼肉更Q弹,鱼骨煎制后加水炖,做出来的鱼汤更营养,虽然比较麻烦,更适合在家操作。

2、鱼片上浆加生粉和红薯粉浆出来的鱼片更Q弹,而且不容易碎,在汆水的时候说要多一点,要做到水开后离火快速下入,上火微开倒出,煮太久鱼片易碎。
