在做菜之前,首先要备料,英语中叫做Minsen-Place,下面简单介绍几种西餐的常见切配方式

1:Julienne,西餐中的切丝,一般的规格是4厘米*3毫米*3毫米,在英语菜谱中常见,比如,40g onion,julienne

2:西餐中的切块,叫做Dice,一般是指切成立方体的块,mirepoix就是其中的一种,常见的是4-6厘米的立方体,英语菜谱中常见cut into dice,就是切块。

3:Brunoise,西餐中的切丁,最常用切的就是洋葱和胡萝卜,规格是3毫米的立方体。

4:Finely Chopped,西餐中的切碎或者是切末,最常见的就是法香碎和洋葱碎。

5:Paysanne,这个是根据食材的形状来切的,可以是三角形,半圆形,除了可以切蔬菜,一般培根片在西餐中的切配,就是paysanne

6:Slice,就是切片

花卷 Huajuan

2.具有中国特色且已被国外主要英文字典收录的,使用汉语方言拼写或音译拼写的菜名,仍保留其原拼写方式。

01.看懂菜单上的分类

我们的中文菜单里会有“热菜”、“凉菜”、“主食”等不同的分类,同样,在英文的菜单里也会有分类,比如西餐菜单就会有:

· to start/starter/appetizer

开胃菜、前菜一类,有沙拉、小点心等食物可供选择。

· soup

汤类,我们一般会选择口味丰富的thick soup浓汤。

· main course/mains

主菜,大多以各种肉类、海鲜类为食材,也有素食食材的主菜。

· on the side

配菜(用来搭配主菜)。

· desserts

甜点,有蛋糕、冰淇淋或水果等。

· dressing/sauce

(沙拉)调料/酱汁

清楚了分类,就可以按需选择,比如不需要前菜或甜点,点单时就可以将其省略。


02.看懂食材的成分

食材的种类是最最核心的,所以我们要学会把菜单里每道菜最主要的成分找出来。比如我们看到的菜单名字是和食材无关的,那就可以问一下服务人员:

What is this made of?

这(菜)是什么做的?

made of:由…做成、制成(P.S.若是像葡萄酿造红酒一样,经过发酵性质改变,就要用wine is made from grapes来表达了)

Beef, chicken or pork?

牛肉、鸡肉还是猪肉?

其他的常见肉类食材还有:

bacon培根,lamb羔羊肉,mutton羊肉,fish鱼肉

常见的蔬菜类食材有:

tomato西红柿,pumpkin南瓜,corn玉米,lettuce 生菜/莴苣,carrot胡萝卜,potato土豆,onion洋葱,mushroom蘑菇,olive橄榄等。


03.看懂烹饪的 ***

同样的食材,烹饪 *** 不同,最终的口感也不同,比如:

mashed potato 土豆泥

baked potato 烤土豆

这里的mashed是捣碎的,捣成糊状的,而baked则是(烤炉或烤箱)烤制的。其他常见的烹饪方式还有:

烤:grilled利用铁网/铁板烤,roasted直接用热源烤

煎:fried

炸:deep fried

煮/炖/焖:braised

蒸:steamed

假如我们看到的菜名没有体现烹饪方式,就可以问一下服务人员:

04.看懂菜品的口味


如果你是有一些忌口的,那么问清楚这道食物的口味还是有必要的,常见的口味有:酸sour,甜sweet,苦bitter,辣spicy,咸salty五种。

询问口味可以这样说:

Is this dish very spicy/sour?

这道菜很辣/酸吗?

05.看懂酒水的单位

最后补充一下酒水的常见单位:

a can/tin of Coke 一听可乐或一罐可乐

can/tin是“罐(装)”的意思

bottle

glass/cup 玻璃杯(无把手)/咖啡杯或茶杯(有把手)
