【竹笋烧牛腩所用的原料】
牛腩2斤、竹笋一个、大葱,大姜
香料:八角,小茴香,香叶,山奈,半个草果皮、干辣椒适量
【竹笋烧牛腩的 *** *** 】
1、首先把牛腩改刀切成2厘米左右的方块,牛腩就是牛腹部最接近牛肋骨的肉,这个地方的肉有筋有肉有肥油,吃着口感不发柴,最适合红烧,下面再把竹笋改刀,竹笋切成小块备用。
2、锅上火加水,冷水下入牛腩汆水,冷水下锅能把牛肉内的血水逼出来,水开后煮1分钟左右,然后捞出来,洗净牛肉表面的浮沫备用。
3、锅上火加热,加入冷油,烧热后滑锅,锅内再加入一点底油,下入香料,干辣椒,葱姜炒香,然后下入牛肉煸炒下,接着下入柱候酱12克,海鲜酱25克,把酱炒香,再加入料酒翻炒均匀,接着下入清水,水要多一点。
4、炖制牛肉的时间比较长,需要1个小时左右,这个时候把加入盐和胡椒粉调底味,水开后下入竹笋,加入一品鲜酱油提鲜,汤汁烧开后调小火炖,防止味汁过快的蒸发,然后盖上盖子。
5、1个小时之后,打开盖子看下锅内的味汁,锅内的汤汁比较少了,如果要是拌面吃,就让汤汁多一点,这个火候就可以关火出锅,当菜吃可以把汤汁收的更粘稠一点,今天没有面条,鹏厨今天用蕨根粉垫底。
这道菜竹笋经过长时间的炖制,依然非常脆嫩入味,竹笋本身的香味也充分的和牛肉融合,下饭拌面都非常好吃,大家可以在家试试!

佘山兰笋怎么做才色香味俱佳?来看这场厨艺大比拼!不醉美酒醉兰笋,兰芬沁齿劝加餐。4月11日下午,由佘山国家旅游度假区主办的第21届上海佘山兰笋文化节兰笋厨艺大比拼活动在广富林宰相府酒店举行。来自全区10家餐饮企业的20名厨师以“笋”为主题,各展身手。
据悉,比赛分为冷菜装盘和热菜烹饪两个项目,既考造型、口味、器皿、色泽香气,也考营养卫生和食材搭配。
每道菜肴既要质地鲜明、咸淡适中、老嫩软脆适宜、营养搭配合理,又要利用新生产、新引进的调味料开发新口味,运用创新的 *** 手法,或在原技法基础上进行创新。
宰相府酒店参赛选手胡会平的冷菜“兰笋甲天下”一端上桌就引得赞叹声连连。“青山绿水”中点缀着“亭台楼阁”,还有新鲜笋衣做成的“小船”,玲珑剔透,其色香味让人垂涎欲滴。希尔顿酒店参赛选手蒋王超的“黑松露兰笋诗韵”,底上铺着一层绿松油,上面则将兰笋切成细丝,加之火腿和老鸡煲汤,再以生态苗做点缀,辅以透明网状食材环绕,尽显诗意。
兰笋是佘山的特有美食,口味鲜美,具有不耐储存、供应依赖季节性强的特点。佘山国家旅游度假区松江管委会副主任周燕介绍,开展兰笋厨艺大比拼不仅能推动传统美食文化的发展,积极宣传各大酒店餐饮特色,也能扩大佘山旅游文化的影响力。
今后,度假区将定期举办兰笋厨艺大比拼,促进旅游企业交流互动,持续推出更多更好的笋产品,做深做实兰笋文化,为市民游客提供更优质的文旅服务。
