所需食材:
鸡蛋3个(148克)、普通面粉290克、盐、猪肉、花雕酒、姜汁、生抽、蚝油、白糖、小葱、香油、玉米淀粉、猪肉、香油
*** 步骤:
之一步:大碗里打入3个鸡蛋,再加入1克盐搅散;接着分次加入290克普通面粉,和成絮状后再下手揉面,和一个偏硬的面团;然后盖上盖子,让面团休息十分钟,再次揉成一个光滑的面团,最后再次盖上盖子让面团休息30分钟。
第二步:准备少许猪肉剁成末,放入碗中,再加入少许花雕酒和姜汁去腥;接着往肉末中加入少许清水,并顺着一个方向搅拌,使肉末呈现嫩嫩的状态;最后往里面加适量生抽、蚝、白糖、盐、青葱调味;拌匀后再淋入少许香油锁住肉末中的水分。
第三步:取出松弛好的面团充分揉匀;接着在案板上撒上少许玉米淀粉,并用擀面杖沿着面团的边缘先擀,把皮子擀大;然后用擀面杖卷起边推边擀,把面皮擀成自己喜欢的厚度。
第四步:把擀好的面皮从中间对半切开,再切成宽度一致的条,最后切成正方形的小块。
第五步:在切好的面皮上放上馅儿,再斜对角包好、捏紧,这样小馄饨就包好了。
第六步:锅中加入适量清水烧开,把馄饨下锅煮开,再激3次水即可;然后把煮熟的馄饨捞出来,放入调好的猪油酱汤中,美味即成!
