·锅中油热以后撒上一点毛毛盐,防止煎鱼粘锅。清洗干净的鱼刺鱼骨下锅煎,一面煎黄以后再放入葱和姜,能吃辣的也可以来点小米辣,再简单的来个大翻锅,底下一面煎香以后来入小半勺白醋,再放入炒好的鱼酸菜,喜欢喝汤的就多加入一点开水。
·然后先大火煮上6分钟,不要加盐了,酸菜里面是有盐味的,酸菜的味道煮出来以后再放入一点自己喜欢吃的配菜,继续煮上3分钟。
·煮好以后将所有的食材先捞出来放入一个大碗里面。接下来很关键鱼汤转小火,让它不要沸腾,再把腌制好的鱼片一片一片的下锅,鱼片没有定型之前不要去搅动它,避免鱼片脱浆以后糊汤全部一卷好就证明已经熟透了,关火出锅。
·上面再来上一点炒香的干辣椒,撒上葱花和香菜。
