所以今天小鹅分享一个不用烤箱、不用电饭煲,普通蒸锅就能做的蒸蛋糕,细腻绵软不塌陷,营养好吃不上火,做法简单又放心。下面来看小鹅是怎么做的吧。

【所需食材】
5个鸡蛋,100g低筋面粉,牛奶50g,食用油40g,白糖60g,白糖40g
【具体做法】
1、首先把5个新鲜鸡蛋打入无水无油的大碗中,再把蛋清捞到另一个大碗中,蛋黄中加入40g白糖,40g食用油,50g纯牛奶,搅拌均匀之后。
2、再筛入100g低筋面粉,上下翻拌成细腻糊状。如果没有低筋面粉,也可以80g普通面粉加20g玉米淀粉,玉米淀粉也没有的话,就全部用普通面粉,不过口感没那么松软。
3、蛋清中加入60g白糖,先低速打发至小泡,再转中高速打发,提起打蛋器有尖角,插入筷子不会倒,这种状态就可以了。糖可以根据个人喜好酌情增减。
4、先把一般蛋白霜倒入蛋黄糊中,上下翻拌均匀。
5、再倒入另一半蛋白霜,上下翻拌均匀,不要划圈搅拌。
6、准备8寸的蛋糕模具,底部和四周刷一层油,倒入面糊,再端起来轻轻震一下气泡,再没有蛋糕模具,可以用不锈钢盆。
7、锅里多加点水提前烧开,立刻放入面糊,这样可以减少消泡。上面再盖上盘子,大火蒸40分钟,时间到后关火焖10分钟,再开盖,焖久一点不容易塌陷回缩。
8、出锅后倒扣过来,稍微冷却一下即可脱模。切成小块即可享用。
香喷喷的蒸蛋糕就做好了,松软香甜像海绵一样,比烤箱烤的蛋糕湿润一下,吃起来更美味。
中间也不夹生,不塌陷不回缩,非常简单,也特别好吃。

不过,凡事都有例外。那个时候学校门口有家面包店,老板贼精,中午的时候出炉新鲜的老式无水蛋糕。那香味别提多勾人了,哪个小孩子顶得住啊,别说小娃娃,老小孩都顶不住。没错,我奶爱吃,所以,我偶尔也能吃上。一老一小,嚼着那新鲜出炉的老蛋糕,一口下去醇香柔软,口口留香。
现在这种老面包店是越来越少啦,想要找回童年的美味记忆不是件容易事。今天给你们分享一个方子,自己在家做来解馋。
你需要准备的材料有:
白砂糖100克,鸡蛋8个,玉米油75克,低筋面粉180克,黑芝麻适量
我要做一个28*28cm大的,所以我要8个鸡蛋。准备一盘温水,水温在50度上下,把鸡蛋那个盆架上去,可以帮助打发。
白糖需要分三次去加,打发全蛋的时间会比较久,不过也是可以成功的。
准备的打蛋盆一定要大一点,不然你就会像我一样,打到一半就满盆了,我换了一个更大的盆。继续打发。
打发之后的全蛋应该颜色发白,拔起打蛋器之后滴落的蛋糊,8秒不会消失才算合格。缺一不可是成败的关键。
手打就不建议了,真的会打到天荒地老。不管你是喜欢单干,还是男女混合双打,都不建议。
然后就是过筛低筋面粉进去,面粉的量很大。不能一次性过筛进去,建议大家分4~5次过筛。
拌面的 *** 也很讲究,不可以搅拌。只可以切拌或者翻拌,就算是翻拌,也一定会有点消泡。这是正常的不要方,拌得温柔一点。
拌完之后加入玉米油,油量不要减少。不然蛋糕口感太噎不好吃,也是用翻拌的手法拌。这会迎来第二次消泡,小气泡没事!大气泡就是出大问题了!说明你拌的手法有问题。
拌均匀之后呢,把蛋糕糊转去烤盘抹平。
把大气泡震出来,能看到蛋糕糊还是比较扎实的。如果你的蛋糕糊很稀,
就代表你的蛋糕没戏了。
请一定要撒一层黑芝麻,超级香的,哇塞不能不加啊。
烤箱预热到175度,如果能调节上下管温度,就上管160度,下管180度。放在中下层,烘烤40分钟,就能烤出不会裂开的蛋糕。

防止变得黑乎乎,烤好以后不用倒扣不会塌。
