1、首先把糯米放进盆内,用清水浸泡一下。然后把莲藕清洗一下,表面的泥沙要去除干净。

6、接下来把适量的红曲米装进煲鱼袋里,把口封好。,没有煲鱼袋的可以用纱布,注意要预留空间大一点,并把口封紧。

7、把泡好的莲藕放进高压锅内,加入适量的清水,水要没过莲藕,再把装有红曲米的煲鱼袋放进锅内,加入400克的冰糖。把锅上火,开火加热,然后盖上高压锅盖,开始压制莲藕,压制时间是40分钟。

8、40分钟后关火,拔下高压阀放气,待高压锅内没有压力,拿下盖子,让莲藕在汤汁内浸泡4个小时左右,让莲藕充分的入味,下面开始收汁,从高压锅水内盛出适量的汤汁,上火熬制,下入糖桂花搅拌均匀,熬制汤汁粘稠即可关火。

9、4个小时之后,把泡好的莲藕捞出,然后切成厚片摆在盘子内,把熬制好的汤汁均匀的浇在切好的莲藕上面即可。

小贴士:

?1、在 *** 这道菜的时候,要注意下糯米的浸泡时间,不低于30分钟,这样做出来的糯米才不会有夹生的现象。

2、高压锅压制是快速的让糯米莲藕成熟软糯,没有高压锅的小伙伴,可以在锅内多加水,煮的时间长一点,大概2个小时左右,直到莲藕软糯即可

3、没有红曲米可以用红汤代替,不过颜色没有红曲米红亮。

5、糯米莲藕做好之后,在浸泡糯米莲藕中间不要再铁锅内泡,防止变黑。

【香辣莲藕】

1.首先我们准备一下食材,莲藕一节削去外皮放入盆中,倒入清水冲洗干净,先切成段再切成片,然后切成均匀条状放入盆中备用。


2.生姜一块 ,用力拍扁切成碎粒,大蒜3粒拍扁以后切成碎末,姜和蒜放在同一个盆中备用,再准备一个小盆,抓入一把花椒,一把干辣椒备用。小香葱三根切成段,放入小盆备用,香菜一小把,切成小段和葱放在一起,再抓入一把白芝麻。


3.食材准备好了,我们进一步处理莲菜,在切好的莲菜中打入一个鸡蛋,用筷子搅拌均匀以后,加入适量玉米淀粉继续搅拌均匀,淀粉分次少量添加,使淀粉裹满每一根莲菜,而不要粘连在一起。


4.接着我们把莲菜过油炸一下,锅内烧油,油温5成热,把莲菜逐个放入锅中,莲菜遇热快速定型,轻轻晃动炒锅并用勺子不断搅拌,防止莲菜粘在锅底,如果有粘连用勺子打散,小火炸3分钟至莲菜表面呈黄色即可捞出。


5.接着升高油温至7成热,进行二次复炸,大火快速复炸20秒后倒出控油,经过复炸的莲菜,颜色更鲜亮,口感更脆。


6.锅内留底油,油热以后倒入花椒和干辣椒,注意温度不要太高,免得辣椒炒糊,翻炒出香辣味倒入姜蒜,翻炒出蒜香以后再把炸好的莲菜倒入锅中,转为小火连续翻炒1分钟使莲菜吸收辣味。


7.撒入食盐2克、味精少许、胡椒粉1克,白糖少许,继续翻炒化开调料,再倒入准备好的葱、香菜、白芝麻,颠锅翻炒均匀即可出锅装盘。
