拔丝芋头的家常做法,成菜色泽鲜艳,口感脆甜

芋头营养价值高,富含蛋白质、钙、磷、铁、钾、镁、钠、胡萝卜素、烟酸、维生素C、B族维生素、皂角甙等多种成分,有益胃、宽肠、通便、解毒、补中益肝肾、消肿止痛、益胃健脾、散结、调节中气、化痰、添精益髓等功效。

先把芋头洗净去皮,切成滚刀切或菱形块,放盘内待炸。

将1碗生油烧至六成热,放入芋头块,用慢火将芋头块炸至呈金黄色,捞出沥净油。

粉糯的芋头是我秋冬更爱囤的食材,不用担心它和别的食材一样,芋头淀粉充足,非常耐储存,放在阴凉干燥处养一养,反而更加香甜软糯。

不仅如此,做法多样,也是我这么偏爱它的原因。

犯懒的时候上锅一蒸就非常好吃了,想喝一碗热汤就把它丢进去和排骨一起炖,汤汁浓郁,味道鲜美。

好吃是好吃,就是有点怕胖,毕竟就这一个菜,也能吃掉三碗饭。

尤其是这过年过节的,天天是鸡鸭鱼肉,油腻的感觉都提到嗓子眼了,想不胖都难。

想要不胖还解腻,我琢磨出了一个新菜谱,我叫它三鲜芋头丸子

鲜美的鸡汤融合了芋头香味,变得十分浓郁可口,光那一口汤喝下去,全身就变的暖乎乎。

经鸡汤炖煮过的芋头,吸饱了汤汁的鲜美,软糯Q弹,这热气腾腾的一锅,吃完只想说两个字:舒服!

芋头300g、木薯淀粉/红薯淀粉:150g

香菇、火腿肠、木耳、葱花

香油、盐、白胡椒粉


300克芋头,去皮切成薄片,记得要戴上手套保护一下,不然手会痒,然后放到热水蒸锅里,用大火蒸15分钟,把芋头蒸熟。

趁着这个时间把香菇切成丝,木耳也切成丝,火腿肠也切成丝,再切点葱花备用。


芋头蒸好后趁热捣成泥,再加一勺盐调味。

然后分多次加入100~150克,木薯淀粉或者红薯淀粉,拌到这样可以揉成团的程度,揉成光滑的芋泥粉团。

然后按照你喜欢的大小,搓成芋头丸子。


今天我用的是鸡汤来煮丸子,味道更好,煮开以后把丸子一个个放进去,煮个3-5钟,等丸子浮起来。


这个时候把刚才切好的火腿,香菇和木耳放进去,做成三鲜汤,再根据个人口味放入,盐和白胡椒粉调味,最后撒上葱花,就可以出锅了。

哈罗,小邓我又来啦,前天被外面美食迷了眼,其中有一个是用芋头做的美食。

它的外皮是裹上了一层白色的米糖,吃起是酥脆又沙沙的牛奶香甜味,好吃也不腻,要回去的时候我还打包了一份回家吃。

今天去菜市场时,临时起意也买回来两个大芋头,大概也有五斤四两,一大一小搭配正好。

其实芋头的做法有很多,像过年时我老爸是用来和扣肉搭配一起菜,不过我不太记得那道菜怎么叫了,你们知道吗?

我们做反沙芋头的用料不多,芋头我拿一个小出来做,大概有350克,白糖准备500克。

我们先把芋头做好,再做糖粉。

做法步骤:

1. 芋头清洗下表面泥,用刀去皮削除啃啃挖挖,再切成小长条的形状。

2. 锅里放油烧热,芋头下锅炸至金黄焦色,如果喜欢吃焦脆的可以多复炸一回,捞出来沥下油。

3. 炸好后,锅里的油倒出来,加入适量的清水和白糖(开小火,搅至粘稠),倒入芋头翻拌下,炒到糖糊变成白色粉,和芋头沾在一起。就可以出锅啦。

没有加牛奶的反沙芋头,吃起来有牛奶香味的甜点,可以尝试哦。
