备料:鲈鱼、葱姜,盐,红辣椒,油,料酒,蒸鱼豉油,香油。
具体做法:
1、鲈鱼处理好后,用清水冲洗干净,备用。
2、葱切丝,红辣椒切丝,姜切丝备用。葱姜料酒,盐,放碗里,用手抓一会,这样更容易入味,备用。
3、把葱姜料酒水浇在鱼身上, *** 一会,把葱姜放鱼身上,腌制20分钟,中间翻面,这样容易入味备用。
4、鲈鱼腌制好了,把葱姜挑出,汤汁倒掉,然后盘里放姜片,葱段,把鱼放入盘里,鱼身上再放入葱姜丝,然后放点料酒,备用。
5、锅里放水烧开后,把鱼放蒸屉,开大火,鱼大蒸10分钟,鱼小蒸8分钟,然后停火闷2分钟。
6、把鱼取出来,把盘里的汤汁倒掉,葱姜挑出不要,然后把蒸鱼豉油均匀浇在鱼身上,再把准备好的葱,姜,红辣椒丝撒在鱼身上备用。
7、锅里放油,将油烧热后淋在蒸好的鲈鱼表面,激发出葱姜辣椒的香味,再淋点香油即可。一道清蒸鲈鱼就做好了,肉质鲜嫩无腥味, *** 简单,色香味俱全,特别好吃。

清蒸鲈鱼怎么做好吃?大厨教你一招,肉质滑嫩,鲜香无腥味真好吃菜市场买回来的鲈鱼,通常会被大家清蒸或是红烧着吃。久而久之一些朋友对这两种吃法产生了厌倦,便不怎么喜欢吃鲈鱼了。今天我来给大家换换口味,用一种新的 *** 来烹饪鲈鱼。做熟后的鲈鱼香辣爽口回味无穷,肯定比你用清蒸或是红烧做出的鲈鱼更美味。这道菜还有一个好听的名字,叫椒香鲈鱼。

烹饪 *** 大体分为两步:第1步是将鲈鱼切好在水中煮熟,第2步则是把煮熟的鲈鱼摆出漂亮的形状,撒上调料用7成热豆油浇一下。这样上面的调料受热就散发出了阵阵香气,也令整道菜显得更有光泽。

【清蒸鲈鱼准备食材】
主料:鲈鱼1条、莴笋丝150克
准备调料:
盐21克、料酒15克、姜片5克、辣椒段10克、蒜蓉10克、熟芝麻3克、葱花8克、大豆油1汤勺、花椒6克、菊花瓣适量
【清蒸鲈鱼 *** 步骤】
一 改刀备用
鲈鱼大体上分为淡水鲈鱼和海水鲈鱼,建议大家选择海水鲈鱼其肉质更为鲜美,腥味也小一些。
买回来的鲈鱼,用酒瓶或擀面杖敲晕刮去鱼鳞。拿剪刀把鱼两侧的鱼腮剪掉,再用刀剖开鱼的肚子掏出里面的内脏,小心不要弄破鱼胆。
掏出内脏后把鱼肠子和苦胆扔掉,其余用水冲洗一下放在小碗中备用。
用自来水把鱼肚子冲洗干净放在菜板上,切掉鱼头和鱼尾。
再横着把鱼两侧的肉切下,将切下的肉切成薄一点的鱼肉片放在一个盆中。
剩下的鱼头鱼尾和鱼骨放在另一个盆中,至此鲈鱼的改刀步骤就完成了,接下来便到了除腥的环节。
二 泡水除腥
想要去除鱼肉的腥味,盐和料酒这两样调料是必不可少的。
我们在盛放鱼肉片和鱼骨的两个盆中各撒入3克食盐、加5克料酒,然后加入足量的清水淹没鱼肉。用筷子搅拌一下,使调料充分溶解。让调料水浸泡鱼肉5分钟以上,这样不但能起到除腥的效果还能使鱼肉入味做出来更好吃。
时间到了后我们把盆中多余的水控掉,这样能清理掉大部分的血水。再次向每个盆中撒入3克食盐加5克料酒,用筷子搅拌一下进行第2次腌制。
这第2次腌制,能让鱼肉的味道更咸也更鲜。腌制时间控制在5分钟以内,腌制过程中我们来处理一下莴笋。
把莴笋洗净切丝,烧一锅开水下入锅中焯2分钟。焯水的时候顺便在锅中加入4克食盐,这样焯好的莴笋丝颜色更绿更入味。
三 浇油品尝
莴笋丝焯好后关火捞出控一下水,将莴笋丝摆在盘子底部。锅中的水倒掉,重新加入半锅清水。
开大火进行烧水,顺便在锅中下入姜片5克、料酒5克、盐5克。当水微微冒泡后,我们把鱼头、鱼尾和鱼骨下入锅中,盖上盖子焖煮13分钟。
时间到了打开盖子捞出控一下水,将鱼头等整齐的摆放在莴笋丝垫底的盘子上。再将剩余的鱼肉片下入锅中,开大火煮10分钟捞出控水整齐摆放在盘子中。
这样鱼头和鱼肉等就煮熟了,当然此时的鱼肉还不能吃,还需要撒入调料浇上热油激发其香味。我们在菜板上切辣椒段10克、蒜蓉10克、葱花8克,将这些碎调料均匀撒在鱼身上。
然后在鱼身上撒上3克左右的白芝麻来提升菜的香味。
炒锅洗干净,用中火烧干加入一汤勺的大豆油。当油烧至微微冒烟后此时的油温6成热,撒上6克左右的花椒炸出香味。
当花椒炸好后,油温大约7成热。这时就可以关火,端起锅把热油均匀浇在鱼身上面。香味刹那间散发出来,再撒上一些菊花瓣配色让整道菜呈现出高大上的视觉冲击。看着这盘色香味俱全的椒香鲈鱼,你难道不想尝一尝吗?
【清蒸鲈鱼技术总结】
1 鲈鱼分为河鲈鱼和海鲈鱼,河鲈鱼的肉会有淡淡的土腥味,如果想让味道更好,建议大家选择海鲈鱼来烹饪。
2 油炸花椒的时候要使用中小火,假如火开的太大,那么花椒就会被炸糊炸苦。要控制好油温,将花椒炸至微微发黑才能同时保留其麻味与香味。
3 假如家中没有菊花瓣,也可以切一些小香葱代替。这样除了能起到配色的效果,还能让整道菜吃起来更爽口。
