手把手教你学做北方人的花卷馍,详细讲解从和面、揉面,两种手法教你,想学不会都难,
花卷馒头做法要领:
1、和面的时候,用温水化开酵母粉,1斤面粉大约3g的酵母粉,里面再加入1小勺白糖,因为白糖可以更快的促进酵母粉的发酵。再把把化开的酵母水和面盆里和面,然后再慢慢加入水和面,水不要一次性全都倒进去。我做这个花卷馍,水和面的大概比例是1:2。面团和好后,盖住让它发酵到原来的两倍大。
2、面团发好拉,可以看图片,整个和面盆里都撑满啦。开始揉面,往面里面加点小苏打进去,放小苏打蒸出来的花卷馍才又白又松软。
面团揉光后用刀切成三等份,蒸馒头的面必须得揉好,我这样反复的揉了大概有5-6次,最后用擀面杖把面团擀到薄厚均匀,然后在上面刷层油。大家也可以加些椒盐和辣椒面进去还有葱花,之前已经蒸了一锅椒盐花卷,所以今天就不加这些了
就这样把面卷起来
然后用刀这样斜切
拿一根筷子在小面团中间使劲一压
然后这样从两边往回再一翻,这个花卷就成型了。这个是其中一种 ***

用刀切的时候稍微切的窄一点
把两块叠放在一起
还是用筷子这样使劲一压
两手从两端再一翻,这个卷就好了
3、花卷做好后,放在笼屉上醒半个小时后再上过蒸。
要冷水入锅、水烧开后大火蒸半个小时就好了。

宅在家早餐怎么吃?教你快速拧葱油花卷,层层分明,馋的直流口水我是一个地地道道的北方人,一日三餐不能少了主食,尤其是馒头、大饼一类的。在北方面粉被做出了各种花样,新花样也是层出不穷,包子、馒头、馅饼等等,更爱的还是那葱油花卷。
因为这次疫情的影响,已经宅在家里好久了,家里没馒头,面粉也所剩无几了,带上口罩去小区超市买了些大葱和面粉,回来果断做葱油花卷来吃,刚做好的花卷层次非常丰富而且明显,里面夹杂着葱花,葱香味尤其浓郁,满屋飘香,松松软软的状态看着就馋人。
如果你像我一样喜欢面食,就可以做一些葱油花卷来吃,丰富一下平时生活还能掌握蒸花卷的小本事,多买一些葱,隔三差五蒸上一锅,全家都吃美了!
葱油大花卷
所需食材:普通面粉500克、酵母粉5克、温水300毫升、食盐5克、葱花适量、食用油适量
所需工具:擀面杖、蒸锅
之一步:面粉里放上酵母粉、食盐、温水和面,搅拌成面絮,揉成光滑的面团,表面刷一层薄油,在温暖的地方发酵到两倍大小。
? 我做的这款花卷偏松软一些,面粉的含水量偏多一些,大家可以把水量自行缩减20克左右;
? 刚开始揉面揉不光滑不要紧,密封饧上三五分钟,接着再揉就很容易揉光滑;
? 放在烤箱里发酵面团会比较干,表面刷一层食油可以锁住面团的水分,这样就解决烤箱发酵面团表面发干的问题了;
第二步:葱油花卷的灵魂就是在葱油了,我用了一整根大葱,把葱花切碎,锅里倒一些食用油,油热下入葱花炒出香味,之后加盐调味,连油带葱花一切盛出来晾凉备用。如果嫌熬葱油麻烦的朋友可以直接放葱花也可以。
第三步:面团发好之后要进行排气的工作,把双手按压面团,这样可以大规模的把气体排出去,而且排的均匀干净一些,排完气之后再揉一会,这样面团筋性大,做出来的花卷口感也会更好。
第四步:排完气之后按扁,擀成一张长方形的饼皮,饼皮不要擀的太薄了,擀好之后均匀的涂抹一层葱花,抹匀一些,然后把饼叠三折,表面再刷一层油,切一窄一宽的面剂子。
? 擀饼皮的时候要注意勤撒干面粉防粘;
? 葱油可以不要涂抹的太多,容易漏油;
第五步:窄的面剂摞在宽的面剂上面,横着用筷子压一下,注意力度不要把剂子压断了,然后反顾来扯长,中间放一根筷子,另一只手捏住另一端开始拧麻花,这样花纹就出来了,最后把筷子向下按,抽出筷子,这样花卷的造型就出来了。
第六步:花卷做好之后凉水或者温水上锅,二次饧发20分钟,然后大火烧开之后转中火蒸20分钟闷5分钟就可以出锅了。
这个花卷的味道真的是香到了飘满了整个屋子,一层层的花卷裹着一层层的葱花,咸香松软,比馒头包子要好吃的很多
