1、鲫鱼是我国最常见的淡水鱼类之一,生活在青藏高原地域以外的各大水系


2、 今天刘嫂就来分享一下“香煎鲫鱼”做法,喜欢的朋友可以先收藏,有空自己试一下。

3、下面开始介绍所需要的食材:

鲫鱼、小葱、生姜、干辣椒、花椒、生抽、食盐、料酒、白糖、味精


4、先把鲫鱼处理干净,里面的黑膜一定要去除,要不然很腥的,再把鱼身上正反面都打上花刀,再把鲫鱼放入盆中。准备小葱切段,生姜切片、干辣椒切段,一起放入鲫鱼盆中把鲫鱼腌制一下


5、再放入少许花椒、食盐、料酒、生抽,抓拌均匀,再把葱姜在鲫鱼肚子里面多擦一会,再把鱼肚子里面放上腌鱼的小料,这样腌制时更容易入味,放在一旁腌制20分钟备用。这时候也可以放到太阳底下晒干水分,这样有干香味,但是我不喜欢就不晒了

6、腌制时间到时,把鱼肚子里面的小料拿掉,把鲫鱼表面的辅料清理干净,再用厨房纸把鲫鱼表面的水分擦干,这样下锅煎的时候油不会溅出来。热锅倒油,关小火,把鲫鱼下锅煎,先不用动它,煎至定型以后再给它翻一个面,把另一面也煎至定型

7、把鲫鱼煎至金黄,盛出装入盘中。煎鱼的锅不用刷,再次放入食用油,再放入干辣椒、葱结、生姜一起爆香,再放入花椒给它炒香,炒香后把鲫鱼倒进来,再淋入少许生抽、一勺白糖、少许味精,轻轻翻动一下,盖上锅盖用小火焖一会

8、焖两分钟,把调料化开。时间到时打开盖子,再轻轻翻动一下就可以出锅了,剩下的香料放在鱼身上,再放少许香菜点缀、白芝麻增香,香煎鲫鱼就做好了

步骤:1、鲫鱼杀好之后打上花刀,然后加入姜片、大葱、盐、料酒、胡椒粉腌制几分钟。泡椒泡姜剁碎,大蒜剁成蒜末,红小米辣切辣椒圈。

2、锅里加适量油,下入花椒爆香,再加豆瓣酱,炒香之后下入泡椒泡姜末,小火炒出香味之后下入蒜末,然后盛出备用。

3、锅里加水,放上蒸格,然后放个盘子把鱼放进里面,再把刚炒好的料均匀地铺在鲫鱼上面,盖上锅盖水开之后蒸8分钟。鲫鱼蒸好之后端出来撒上葱丝、小米辣圈、适量蒸鱼豉油,最后浇一勺滚油,放几片香菜叶子。

用料
  • 鲫鱼 4条
  • 菜籽油 大量
  • 泡青菜 适量
  • 泡红辣椒 适量
  • 泡姜 1块
  • 蒜 2个
  • 葱 适量
  • 盐 克
  • 淀粉 1勺
  • 花椒 少量

做法步骤

1、市场上买了4条鲫鱼,老板处理好后,回家洗洗,加入姜和少量料酒揉搓鱼的各个面两分钟后,再腌制10分钟。

2、腌好之后用水冲洗,因为我不喜欢料酒味,如果不介意的可以不冲洗。洗好后放入淀粉均匀抹在鱼的表面。

3、这是抹好后的模样

4、锅中放油,更好是菜籽油更香

5、油烧好后放鱼炸,放下去之后炸一两分钟再翻身,不然鱼容易烂

6、我是两根两根一起炸的,这个是炸了5分钟左右的样子

7、这是炸了10分钟左右,可以起锅了,起锅后,两个鱼一碰就是酥脆的声音,我的封面图有两条鱼相碰的声音的视频

8、这是4只鱼炸好的样子,到这步骤就可以沾点辣椒面吃,脆香脆香的。

9、准备泡酸菜,泡姜,泡小米辣,蒜,切好备用

10、锅中下刚刚炸过鱼的油,加一点猪油更香,如果没有猪油就不用

11、油热后加入花椒,豆瓣酱,以及刚刚切好的配料炒大概3分钟,主要是炒香,这个时间大家自己定义

12、加入水,把水烧开

13、水开后加入鱼煮,大概煮10分钟左右,煮的时间不长,鱼很绵,煮长一点又入味又香

14、加入葱,起锅,我吃了一些才想起照相,太好吃了

小贴士

1.这道菜油要多,如果想吃少一点油的就不用做了,给不怕油多的小伙伴。 2.炸鱼要炸酥,小火炸,免得糊了。
